Peanut Butter Energy Balls {Gluten Free, Vegan}

Ingredients:

  • 1 cup creamy peanut butter
  • 1/2 cup gluten free oats 
  • 2 tbsp ground flaxseed
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1/2 tsp coarse sea salt
  • optional—2 tbsp mini chocolate chips (fold in after all other ingredients are combined)

Directions:

  1. Add oats and ground flaxseed to a high powered blender or food processor and blend until combined.
  2. Place peanut butter, maple syrup, vanilla, sea salt, and chocolate chips in a bowl and add the ground oats and flaxseed.
  3. Stir until combined.
  4. Scoop out 1 tbsp at a time and roll into balls.
  5. Store in an airtight container in refrigerator or freezer.
