Spinach and Egg Scramble

Ingredients
  

  • 1 large egg
  • 3 large egg whites
  • 1 handful baby spinach
  • 1/2 cup grape tomatoes
  • 2 tbsp crumbled feta cheese
  • spray avocado oil
  • 1/8 tsp black pepper
  • 1/4 tsp sea salt
  • 1/4 tsp dried basil

Instructions
 

  • Separate 3 eggs whites and place in a small mixing bowl
  • Add one whole egg to the egg whites and whisk together
  • Stir in salt, pepper, and basil (set aside)
  • Cut tomatoes in half lengthwise and set aside
  • Heat a medium skillet to medium heat and spray with avocado oil
  • Add spinach and tomatoes to skillet and saute until spinach is wilted
  • Add egg mixture to skillet with spinach and tomatoes and cook until eggs are cooked through
  • Top with 2 tbsp feta cheese and enjoy a tasty scramble with half the fat!
