The BEST Guacamole {gluten free, healthy, low carb}

Holy Guacamole!!! I LOVE guacamole! Whole Foods, Paul’s Fruit Market, Cheesecake Factory, QDoba, Chipotle…some of my favorites, but none are available where I now live. So I had to take matters into my own hands and create a guacamole recipe that would satisfy my craving out here in the country! AND I NAILED IT!!! Seriously, you HAVE to try this recipe! My 3 year old asked me to make more because it is so good that we ate the entire batch in 2 days!

When it comes to guacamole, I’m a NO tomatoes kinda girl. But I know a lot of people like them, so I’ve added an option for tomatoes that includes increasing the amount of salt used. For me, guacamole should be creamy and green with just the right amount of acidity. This recipe isn’t spicy at all, so please feel free to increase the amount of jalapeño you use if you prefer things a bit spicy. 

Avocados: these need to be ripe or they won’t mash properly, and they won’t taste good either. 

Onions: I used a yellow onion, but red, sweet, and white onions work here too.

Jalapeño: remove the seeds and give it a fine chop so the pieces are really small

Lime: squeezing by hand won’t yield as much juice as using a juicer, so keep that in mind during your taste test and adjust accordingly

Garlic: store-bought minced garlic works in a pinch, or use about 2 cloves for this recipe

Cilantro: be sure to wash the cilantro and pat it dry before giving it a fine chop

Ingredients
  

  • 3 ripe avocados
  • 1/4 cup diced onion red, yellow, sweet, or white
  • 1/2 jalapeno, seeds removed, finely diced
  • 1 lime, juiced
  • 1 tbsp fresh cilantro, finely chopped
  • 1/2 tbsp minced garlic about 2 cloves
  • 1/4 tsp sea salt

Instructions
 

  • Slice avocados in half lengthwise and remove pit
  • Scoop avocado into a mixing bowl and mash with a fork
  • Squeeze in the juice from 1 lime and stir (this will hep prevent the avocados from turning brown)
  • Add the remaining ingredients and stir to combine
  • Give it a little taste test. If it needs more salt, add in 1/8 tsp at a time and stir
  • If you prefer tomatoes in your guacamole, add 1/4 cup diced tomatoes and an extra 1/4 tsp salt and stir.
  • This is the best guacamole you’ll ever eat! 
  • Serve with your favorite tortilla chips or scoop it onto a burrito bowl!
